Researchers have found that bread crusts contain an anti-oxidant known as pronyl-lysine.
Pronyl-lysine has been found to increase levels of enzymes thought to prevent cancer in our human intestinal cells by around 40%!!!
Pronyl-lysine is formed from starch and the an AMINO ACID called lysine at very high temperatures.
It can only do so on the outside of the bread, which is baked at 250 degree celsius. Because the water content of the interior causes temperature to not exceed 100 degree celsius within the bread.
Therefore, eat some crust if you can! : P
